One of my favorite homemade type food is a buttermilk biscuits. Diet recipes usually don’t include biscuits, because usually people eat them with gravy or sausage gravy. Of course you can bake biscuits with breakfast or dinner. The important thing is to be careful what you put on the biscuits. These biscuits are 100 calories each, which is like a slice of whole wheat bread. To keep these low calorie, you probably don’t want to put butter or margarine on these. Something to put on these that isn’t too high in calories or fat is some type of jam or even honey or my favorite agave syrup.
If you want you could even scramble some egg whites and make a breakfast sandwich, but make sure not to have any sausage. For lunch or dinner you could sauté some vegetables to go with the biscuits.
Ingredients:
2 cups flour
¾ cup fat free buttermilk
3 tablespoons cold butter
2 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
How to prepare:
- Preheat oven to 450 degrees
- In a bowl combine flour, baking powder, baking soda and salt
- Add the butter and mix until the ingredients are like corn meal
- Stir in buttermilk until all the ingredients are wet
- Put the dough on a clean, floured surface and knead the dough a few times.
- You can either make drop biscuits with a large spoon, by scooping out some dough and place on baking sheet, or you can roll out dough to a half inch thick and use a biscuit cutter or something else to cut out the biscuits.
- Bake for 12 minutes or until slightly browned.
